Greek Kofta Bowls
Ingredients
- 2 lb ground beef
- 1 Tbsp Greek seasoning
- 3 cloves garlic, minced
- 2 (12-oz) pkg frozen riced cauliflower
- 1 Tbsp olive oil
- ¼ tsp salt
- ¼ tsp pepper
- 1 (6-oz) pkg baby spinach
- 1 pint grape tomatoes, halved
- 1 (16-oz) container tzatziki dip
Instructions
- Preheat oven to 400°F. Combine beef, Greek seasoning, and garlic in a large bowl; shape into 12 oblong meatballs.
- Place meatballs on a lightly greased wire rack over a foil-lined large rimmed baking sheet.
- Bake 15 to 20 minutes or until meatballs are no longer pink in center.
- Meanwhile, cook cauliflower according to package directions. Stir in oil, salt, and pepper.
- Divide cauliflower and spinach among 6 bowls. Top with meatballs and tomatoes. Serve with tzatziki.
