Greek Kofta Bowls

Ingredients

  • 2 lb ground beef
  • 1 Tbsp Greek seasoning
  • 3 cloves garlic, minced
  • 2 (12-oz) pkg frozen riced cauliflower
  • 1 Tbsp olive oil
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1 (6-oz) pkg baby spinach
  • 1 pint grape tomatoes, halved
  • 1 (16-oz) container tzatziki dip

Instructions

  1. Preheat oven to 400°F. Combine beef, Greek seasoning, and garlic in a large bowl; shape into 12 oblong meatballs.
  2. Place meatballs on a lightly greased wire rack over a foil-lined large rimmed baking sheet.
  3. Bake 15 to 20 minutes or until meatballs are no longer pink in center.
  4. Meanwhile, cook cauliflower according to package directions. Stir in oil, salt, and pepper.
  5. Divide cauliflower and spinach among 6 bowls. Top with meatballs and tomatoes. Serve with tzatziki.
