Top Sirloin with Balsamic Mustard Sauce
Parmesan-Broiled Tomatoes and Arugula Salad

Ingredients
- ¾ lb top sirloin steak
- ½ tsp garlic salt
- ½ tsp pepper
- 2 Tbsp olive oil
- ⅓ cup balsamic vinegar
- 3 Tbsp Dijon mustard
Instructions
- Sprinkle steak with garlic salt and pepper. Cook steak in hot oil in a nonstick skillet over medium heat 5 to 6 minutes per side or to desired doneness; remove from skillet, and keep warm.
- Add vinegar to skillet; cook 3 minutes or until reduced by half. Whisk in mustard.
- Serve sauce over steak.

- 2 large tomatoes
- 3 Tbsp shredded Parmesan cheese
- ½ (5-oz) container arugula
- 3 Tbsp lemon vinaigrrette
Side Dish Instructions
- Preheat oven to 450°F. Cut tomatoes in half crosswise. Place tomatoes, cut sides up, on a baking sheet. Sprinkle with salt and pepper, if desired. Top with cheese. Bake 15 minutes or until cheese is melted and lightly browned.
- Toss together arugula and vinaigrette in a bowl just before serving.
