Grilled Honey-Sriracha Chicken Kabobs

Ingredients
- 3 Tbsp Sriracha, divided
- 1 Tbsp honey
- ¾ lb boneless, skinless chicken breasts
- ½ tsp lime zest
- 1 Tbsp fresh lime juice
- ¼ cup chopped fresh cilantro
Instructions
- Preheat grill or grill pan to medium-high heat. Whisk together 1 Tbsp Sriracha and honey in a small bowl.
- Cut chicken into 1-inch chunks and thread onto bamboo or metal skewers; place in a shallow pan. Whisk together 2 Tbsp Sriracha, lime zest, and lime juice; brush over chicken, turning to coat. Let stand 5 minutes.
- Grill chicken, covered, 5 to 6 minutes per side or until done. Brush with honey mixture and sprinkle with cilantro.
Side Dish Ingredients
- 1 zucchini
- 1 (8-oz) pkg sliced mushrooms
- 1 Tbsp olive oil
- ½ tsp garlic salt
- 1 (8-oz) pouch microwavable long grain white rice
Side Dish Instructions
- Cut zucchini in half lengthwise; slice into ½-inch-thick half-moons.
- Cook zucchini and mushrooms in hot oil in a large skillet over medium heat until zucchini is tender. Stir in garlic salt.
- Heat rice according to package directions.
