Greek Relish Burgers

Ingredients
- ½ lb lean ground beef
- ⅛ tsp salt
- ½ tsp pepper
- 2 Tbsp olive oil, divided
- ¼ cup finely chopped red onion
- 2 organic tomatoes, chopped
- ½ (6-oz) jar marinated artichoke hearts, drained and chopped
- ¼ cup organic roasted red peppers, drained and chopped
- 2 Tbsp chopped pitted kalamata olives
- 2 hamburger buns
- ½ (5-oz) pkg arugula
- 2 Tbsp olive oil mayonnaise
Instructions
- Preheat grill to medium-high heat. Combine beef, salt, and pepper in a large bowl; mix just until blended. Shape into 2 patties.
- Grill patties, covered, on a grill rack rubbed with 1 Tbsp oil 5 to 6 minutes per side or until no longer pink.
- Cook onion in 1 Tbsp hot oil in a skillet over medium heat 2 to 3 minutes or until tender; stir in tomatoes, artichokes, roasted peppers, and olives.
- Serve burgers on buns with relish, arugula, and mayonnaise.

- ¾ lb Yukon Gold potatoes, cubed
- 1 Tbsp olive oil
- 1 Tbsp lemon juice
- ⅛ tsp salt
- ⅛ tsp pepper
- ¼ tsp dry mustard
- 2 Tbsp chopped green onion
- 1 Tbsp chopped fresh parsley
Side Dish Instructions
- Cook potatoes in salted boiling water to cover 10 to 15 minutes or until just tender; drain.
- Whisk together oil, lemon juice, salt, pepper, and mustard; toss with warm potatoes, onion, and parsley.
