Ingredients

  • ½ lb lean ground beef
  • ⅛ tsp salt
  • ½ tsp pepper
  • 2 Tbsp olive oil, divided
  • ¼ cup finely chopped red onion
  • 2 organic tomatoes, chopped
  • ½ (6-oz) jar marinated artichoke hearts, drained and chopped
  • ¼ cup organic roasted red peppers, drained and chopped
  • 2 Tbsp chopped pitted kalamata olives
  • 2 hamburger buns
  • ½ (5-oz) pkg arugula
  • 2 Tbsp olive oil mayonnaise

Instructions

  1. Preheat grill to medium-high heat. Combine beef, salt, and pepper in a large bowl; mix just until blended. Shape into 2 patties.
  2. Grill patties, covered, on a grill rack rubbed with 1 Tbsp oil 5 to 6 minutes per side or until no longer pink.
  3. Cook onion in 1 Tbsp hot oil in a skillet over medium heat 2 to 3 minutes or until tender; stir in tomatoes, artichokes, roasted peppers, and olives.
  4. Serve burgers on buns with relish, arugula, and mayonnaise.

  • ¾ lb Yukon Gold potatoes, cubed
  • 1 Tbsp olive oil
  • 1 Tbsp lemon juice
  • ⅛ tsp salt
  • ⅛ tsp pepper
  • ¼ tsp dry mustard
  • 2 Tbsp chopped green onion
  • 1 Tbsp chopped fresh parsley

Side Dish Instructions

  1. Cook potatoes in salted boiling water to cover 10 to 15 minutes or until just tender; drain.
  2. Whisk together oil, lemon juice, salt, pepper, and mustard; toss with warm potatoes, onion, and parsley.
