Sausage Gumbo

Ingredients

  • 1 (12-oz) pkg Cajun style andouille sausage, sliced
  • 3 Tbsp olive oil
  • 3 Tbsp whole wheat flour
  • ½ small red bell pepper, chopped
  • ½ onion, chopped
  • 1 clove garlic, minced
  • ½ tsp dried oregano
  • ½ tsp pepper
  • ¼ tsp salt
  • 2 cups water
  • ½ (10-oz) pkg frozen cut okra
  • ¾ cup instant brown rice

Instructions

  1. Brown sausage in a Dutch oven over medium heat. Remove sausage from pot; set aside.
  2. Add oil and flour to same pot; cook over medium heat, stirring, 5 minutes or until golden. Add bell pepper, onion, garlic, oregano, pepper, and salt; sauté 10 minutes or until vegetables are tender; add water, okra, and sausage. Bring to a boil; reduce heat, and simmer 10 minutes or until thickened.
  3. Meanwhile, cook rice according to package directions. Serve gumbo over rice.
