Sausage Gumbo

Ingredients
- 1 (12-oz) pkg Cajun style andouille sausage, sliced
- 3 Tbsp olive oil
- 3 Tbsp whole wheat flour
- ½ small red bell pepper, chopped
- ½ onion, chopped
- 1 clove garlic, minced
- ½ tsp dried oregano
- ½ tsp pepper
- ¼ tsp salt
- 2 cups water
- ½ (10-oz) pkg frozen cut okra
- ¾ cup instant brown rice
Instructions
- Brown sausage in a Dutch oven over medium heat. Remove sausage from pot; set aside.
- Add oil and flour to same pot; cook over medium heat, stirring, 5 minutes or until golden. Add bell pepper, onion, garlic, oregano, pepper, and salt; sauté 10 minutes or until vegetables are tender; add water, okra, and sausage. Bring to a boil; reduce heat, and simmer 10 minutes or until thickened.
- Meanwhile, cook rice according to package directions. Serve gumbo over rice.
