Italian Beef and Sausage Subs
Arugula with Oranges and Almonds

Ingredients
- 2 (8-oz) pkg sliced baby portobello mushrooms
- 1 Tbsp olive oil
- ½ lb ground sirloin
- ½ lb ground turkey breakfast sausage
- ½ cup diced red onion
- 1 (24-oz) jar marinara sauce
- 6 (1.75-oz) top sliced hot dog buns
- 1 cup shredded mozzarella cheese
Instructions
- Preheat broiler. Cook mushrooms in hot oil in a large nonstick skillet over medium-high 6 to 8 minutes or until browned; remove from skillet.
- Add beef, sausage, and onion to skillet; cook 5 to 6 minutes or until browned and crumbly. Stir in mushrooms and sauce; cook 3 minutes or until thoroughly heated.
- Place buns on a baking sheet, cut sides up, and spoon mushroom mixture into buns. Sprinkle with cheese.
- Broil 2 to 3 minutes or until cheese melts.

- 1 Tbsp white wine vinegar
- ¼ tsp salt
- ¼ tsp pepper
- 1 (10-oz) pkg arugula
- 3 oranges, peeled and sectioned
- ¼ cup coarsely chopped almonds
Side Dish Instructions
- Whisk together oil, vinegar, salt, and pepper in a large bowl. Add arugula, oranges, and nuts; toss.
