Sheet Pan Greek Chicken Quesadillas

Ingredients
- 1½ oz cream cheese, softened
- ⅓ cup crumbled feta cheese, divided
- 2 Tbsp chopped fresh mint, divided
- 2 burrito flour tortillas
- 1 cup shredded rotisserie chicken
- 1 cup chopped spinach
- 1 Tbsp olive oil
- ¼ cup whole milk Greek yogurt
- 1 small clove garlic, minced
Instructions
- Preheat oven to 450°F; place a baking sheet in oven while preheating.
- Combine cream cheese, ¼ cup feta cheese, and 1 Tbsp mint in a bowl. Spread cream cheese mixture on half of each tortillas. Top with chicken and spinach. Fold tortillas over filling, securing with a wooden pick, if needed.
- Brush tortillas with oil. Carefully transfer filled tortillas to preheated baking sheet. Bake 10 minutes or until crisp and golden brown. Cut into wedges.
- Meanwhile, stir together yogurt, remaining feta cheese, 1 Tbsp mint, and garlic. Serve mixture with quesadillas.
