Ingredients

  • 1½ oz cream cheese, softened
  • ⅓ cup crumbled feta cheese, divided
  • 2 Tbsp chopped fresh mint, divided
  • 2 burrito flour tortillas
  • 1 cup shredded rotisserie chicken
  • 1 cup chopped spinach
  • 1 Tbsp olive oil
  • ¼ cup whole milk Greek yogurt
  • 1 small clove garlic, minced

Instructions

  1. Preheat oven to 450°F; place a baking sheet in oven while preheating.
  2. Combine cream cheese, ¼ cup feta cheese, and 1 Tbsp mint in a bowl. Spread cream cheese mixture on half of each tortillas. Top with chicken and spinach. Fold tortillas over filling, securing with a wooden pick, if needed.
  3. Brush tortillas with oil. Carefully transfer filled tortillas to preheated baking sheet. Bake 10 minutes or until crisp and golden brown. Cut into wedges.
  4. Meanwhile, stir together yogurt, remaining feta cheese, 1 Tbsp mint, and garlic. Serve mixture with quesadillas.
