Ingredients

  • 1½ lb peeled and deveined, large cooked shrimp
  • ⅓ cup olive oil mayonnaise
  • ¼ cup plain Greek yogurt
  • 2 Tbsp lemon juice
  • ½ cup chopped organic celery
  • 3 Tbsp chopped fresh parsley
  • ½ tsp smoked paprika
  • ½ tsp salt
  • ½ tsp pepper
  • 6 hoagie rolls
  • 3 Tbsp butter, softened
  • 2 cups organic baby spinach

Instructions

  1. Coarsely chop shrimp. Combine shrimp, mayonnaise, yogurt, lemon juice, celery, parsley, paprika, salt, and pepper in a large bowl; chill until ready to serve.
  2. Cut a slit down center of each roll; brush cut sides with butter. Heat, cut sides down, in a large skillet over medium-high heat 2 minutes or until toasted.
  3. Serve shrimp salad and spinach in rolls.

Side Dish Ingredients

  • 1 Tbsp white balsamic vinegar
  • 1 Tbsp olive oil
  • 1 Tbsp honey
  • 4 organic apples, chopped
  • 2 cups organic seedless green grapes, halved

Side Dish Instructions

  1. Whisk together vinegar, oil, and honey in a medium-size bowl; add apples and grapes. Toss.
