Shrimp Salad Rolls
Apple and Grape Balsamic Salad

Ingredients
- 1½ lb peeled and deveined, large cooked shrimp
- ⅓ cup olive oil mayonnaise
- ¼ cup plain Greek yogurt
- 2 Tbsp lemon juice
- ½ cup chopped organic celery
- 3 Tbsp chopped fresh parsley
- ½ tsp smoked paprika
- ½ tsp salt
- ½ tsp pepper
- 6 hoagie rolls
- 3 Tbsp butter, softened
- 2 cups organic baby spinach
Instructions
- Coarsely chop shrimp. Combine shrimp, mayonnaise, yogurt, lemon juice, celery, parsley, paprika, salt, and pepper in a large bowl; chill until ready to serve.
- Cut a slit down center of each roll; brush cut sides with butter. Heat, cut sides down, in a large skillet over medium-high heat 2 minutes or until toasted.
- Serve shrimp salad and spinach in rolls.

- 1 Tbsp white balsamic vinegar
- 1 Tbsp olive oil
- 1 Tbsp honey
- 4 organic apples, chopped
- 2 cups organic seedless green grapes, halved
Side Dish Instructions
- Whisk together vinegar, oil, and honey in a medium-size bowl; add apples and grapes. Toss.
