Spinach, Artichoke, and Flank Steak Salad

Ingredients

  • 1 lb flank steak, trimmed
  • ½ Tbsp lemon pepper seasoning
  • ½ tsp garlic salt
  • 2 Tbsp olive oil
  • 1 Tbsp red wine vinegar
  • 1 small clove garlic, minced
  • 1 tsp dried thyme
  • ¼ tsp Dijon mustard
  • ¼ tsp salt
  • 1 (5-oz) pkg baby spinach
  • 1 tomato, cut into wedges
  • ½ (12-oz) jar quartered marinated artichoke hearts, drained
  • ½ (6-oz) pkg crumbled feta cheese

Instructions

  1. Preheat broiler. Sprinkle steak with lemon-pepper and garlic salt; place on a broiler pan coated with cooking spray.
  2. Broil 5 minutes per side or to desired doneness. Let stand 10 minutes before thinly slicing across the grain.
  3. Meanwhile, whisk together oil, vinegar, garlic, thyme, mustard, and salt in a large bowl. Add spinach, tomato, and artichokes; toss. Top with steak and cheese.
