Ingredients
- 1 (10-oz) pkg zucchini noodles
- 2 Tbsp olive oil, divided
- ¼ tsp salt, divided
- ¼ tsp pepper, divided
- ¾ lb boneless, skinless chicken breasts, halved crosswise
- 3 oz fresh mozzarella cheese, sliced
- 1 cup grape tomatoes, halved
- 2 Tbsp fresh basil leaves
- ¼ cup pesto
Instructions
- Combine zucchini noodles, 1 Tbsp oil, and ⅛ tsp each salt and pepper in a medium bowl; let stand 15 minutes.
- Meanwhile, pound chicken to an even thickness between plastic wrap using a meat mallet. Sprinkle with ⅛ tsp each salt and pepper.
- Cook chicken in 1 Tbsp hot oil in a cast-iron skillet or grill pan over medium-high heat 4 to 5 minutes per side or until done. Slice chicken.
- Divide zucchini noodles between 2 plates; top with chicken, cheese, tomatoes, and basil.
- Microwave pesto in a microwave-safe bowl at HIGH 30 seconds or until warm; drizzle over chicken and zucchini noodles.
