Ingredients

  • 1 (10-oz) pkg zucchini noodles
  • 2 Tbsp olive oil, divided
  • ¼ tsp salt, divided
  • ¼ tsp pepper, divided
  • ¾ lb boneless, skinless chicken breasts, halved crosswise
  • 3 oz fresh mozzarella cheese, sliced
  • 1 cup grape tomatoes, halved
  • 2 Tbsp fresh basil leaves
  • ¼ cup pesto

Instructions

  1. Combine zucchini noodles, 1 Tbsp oil, and ⅛ tsp each salt and pepper in a medium bowl; let stand 15 minutes.
  2. Meanwhile, pound chicken to an even thickness between plastic wrap using a meat mallet. Sprinkle with ⅛ tsp each salt and pepper.
  3. Cook chicken in 1 Tbsp hot oil in a cast-iron skillet or grill pan over medium-high heat 4 to 5 minutes per side or until done. Slice chicken.
  4. Divide zucchini noodles between 2 plates; top with chicken, cheese, tomatoes, and basil.
  5. Microwave pesto in a microwave-safe bowl at HIGH 30 seconds or until warm; drizzle over chicken and zucchini noodles.
