Barbecue Chicken Mac and Cheese Bowls

Ingredients

  • 1½ lb boneless, skinless chicken breasts, cubed
  • 2 Tbsp olive oil
  • 1 cup barbecue sauce
  • 2 (20-oz) cartons refrigerated macaroni and cheese
  • 1 cup shredded Monterey Jack cheese

Instructions

  1. Season chicken with salt and pepper, if desired. Cook chicken in hot oil in a large skillet over medium heat until done. Add barbecue sauce, stirring until thoroughly heated.
  2. Meanwhile, heat macaroni and cheese according to package directions. Divide macaroni and cheese among 6 bowls. Top with barbecue chicken and shredded cheese.

  • 2 (12-oz) pkg broccoli florets
  • 3 Tbsp olive oil
  • 1 tsp garlic powder
  • ¼ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Preheat oven to 400°F. Toss together broccoli, oil, garlic powder, salt, and pepper on a rimmed baking sheet; spread in a single layer. Bake 15 to 20 minutes or until crisp-tender.
