Barbecue Chicken Mac and Cheese Bowls
Garlic-Roasted Broccoli
Ingredients
- 1½ lb boneless, skinless chicken breasts, cubed
- 2 Tbsp olive oil
- 1 cup barbecue sauce
- 2 (20-oz) cartons refrigerated macaroni and cheese
- 1 cup shredded Monterey Jack cheese
Instructions
- Season chicken with salt and pepper, if desired. Cook chicken in hot oil in a large skillet over medium heat until done. Add barbecue sauce, stirring until thoroughly heated.
- Meanwhile, heat macaroni and cheese according to package directions. Divide macaroni and cheese among 6 bowls. Top with barbecue chicken and shredded cheese.

- 2 (12-oz) pkg broccoli florets
- 3 Tbsp olive oil
- 1 tsp garlic powder
- ¼ tsp salt
- ¼ tsp pepper
Side Dish Instructions
- Preheat oven to 400°F. Toss together broccoli, oil, garlic powder, salt, and pepper on a rimmed baking sheet; spread in a single layer. Bake 15 to 20 minutes or until crisp-tender.
