Creamy Pesto Shrimp

Ingredients
- 2 Tbsp butter
- 2 lb peeled and deveined, large raw shrimp
- 1 cup heavy cream
- ½ cup pesto
- 1 cup freshly shredded Parmesan cheese
Instructions
- Melt butter in a large nonstick skillet over medium-high heat. Add shrimp to skillet, and cook 2 to 3 minutes per side or until shrimp are done. Remove from skillet, and keep warm.
- Add cream and pesto to skillet; cook, stirring occasionally, until slightly thickened.
- Return shrimp to skillet. Sprinkle with cheese.

- 3 (10-oz) pkg zucchini spirals
- 2 cloves garlic, minced
- ½ tsp salt
- ½ tsp pepper
- 2 Tbsp olive oil
Side Dish Instructions
- Cook zucchini, garlic, salt, and pepper in hot oil in a large nonstick skillet over medium-high heat 8 minutes or until zucchini is tender.
