Easy Tuna Melts

Ingredients

  • 3 (5-oz) cans wild caught, no salt added tuna, drained
  • 6 Tbsp minced celery
  • 6 Tbsp avocado oil mayonnaise
  • 3 tsp Dijon mustard
  • ½ tsp onion powder
  • ½ tsp garlic powder
  • ½ tsp pepper
  • 12 (1.1-oz) slices zero carb bread
  • 12 (1-oz) slices sharp Cheddar cheese

Instructions

  1. Position oven rack on second shelf. Preheat broiler. Gently combine tuna and next 6 ingredients in a large bowl.
  2. Place 6 bread slices on a large rimmed baking sheet; divide tuna mixture among bread slices. Top each sandwich with 2 slices of cheese; broil 1 minute or until cheese is melted. Top with remaining bread.

  • ¼ cup olive oil
  • 2 Tbsp fresh lime juice
  • ½ tsp salt
  • ½ tsp pepper
  • ½ tsp ground cumin
  • 2 (5-oz) pkg mixed baby greens
  • 1 avocado, sliced
  • 1 cup grape tomatoes, halved

Side Dish Instructions

  1. Whisk together oil, lime juice, salt, pepper, and cumin.
  2. Combine greens, avocado, and grape tomatoes in a large bowl; drizzle dressing over salad. Toss.
