Smoky Pork Tenderloin, Sweet Potatoes, and Broccoli
Ingredients
- 2 (1-lb) pork tenderloins, trimmed
- ¼ cup olive oil, divided
- 2 tsp smoked paprika
- 1 tsp salt, divided
- 1 tsp pepper, divided
- 3 sweet potatoes, cut into wedges
- 1½ tsp garlic powder
- 2 (12-oz) pkg broccoli florets
Instructions
- Preheat oven to 400°F. Place pork on a lightly greased rimmed baking sheet; rub with 1 Tbsp oil, paprika, and ½ tsp each salt and pepper.
- Toss potatoes with 2 Tbsp oil, garlic powder, and ¼ tsp each salt and pepper; scatter around pork on baking sheet.
- Bake 18 minutes, turning pork and potatoes after 10 minutes.
- Meanwhile, toss broccoli with 1 Tbsp oil and ¼ tsp salt; add to baking sheet with pork and potatoes. Bake 5 minutes longer or until pork is done and vegetables are tender.
