Smoky Pork Tenderloin, Sweet Potatoes, and Broccoli

Ingredients

  • 2 (1-lb) pork tenderloins, trimmed
  • ¼ cup olive oil, divided
  • 2 tsp smoked paprika
  • 1 tsp salt, divided
  • 1 tsp pepper, divided
  • 3 sweet potatoes, cut into wedges
  • 1½ tsp garlic powder
  • 2 (12-oz) pkg broccoli florets

Instructions

  1. Preheat oven to 400°F. Place pork on a lightly greased rimmed baking sheet; rub with 1 Tbsp oil, paprika, and ½ tsp each salt and pepper.
  2. Toss potatoes with 2 Tbsp oil, garlic powder, and ¼ tsp each salt and pepper;  scatter around pork on baking sheet.
  3. Bake 18 minutes, turning pork and potatoes after 10 minutes.
  4. Meanwhile, toss broccoli with 1 Tbsp oil and ¼ tsp salt; add to baking sheet with pork and potatoes. Bake 5 minutes longer or until pork is done and vegetables are tender.
