Bacon Fried Rice

Ingredients

  • 1½ cups long grain white rice
  • 12 slices bacon, chopped
  • 3 large eggs, lightly beaten
  • 1 (12-oz) pkg frozen peas and carrots, thawed
  • 3 cloves garlic, minced
  • 3 Tbsp vegetable oil
  • ⅓ cup less sodium soy sauce
  • 3 green onions, sliced

Instructions

  1. Cook rice according to package directions; spread in a single layer on a baking sheet, and refrigerate 30 minutes. See Note.
  2. Meanwhile, cook bacon in a large skillet over medium heat 6 to 8 minutes or until crisp. Remove bacon from skillet, reserving 2 Tbsp drippings in skillet.
  3. Add eggs to drippings in skillet, and cook over medium heat, stirring occasionally, until just set. Remove from skillet.
  4. Cook rice, vegetables, and garlic in hot oil in same skillet 5 minutes or until vegetables are tender. Stir in eggs, bacon, soy sauce, and green onions; cook until thoroughly heated.
