Bacon Fried Rice

Ingredients
- 1½ cups long grain white rice
- 12 slices bacon, chopped
- 3 large eggs, lightly beaten
- 1 (12-oz) pkg frozen peas and carrots, thawed
- 3 cloves garlic, minced
- 3 Tbsp vegetable oil
- ⅓ cup less sodium soy sauce
- 3 green onions, sliced
Instructions
- Cook rice according to package directions; spread in a single layer on a baking sheet, and refrigerate 30 minutes. See Note.
- Meanwhile, cook bacon in a large skillet over medium heat 6 to 8 minutes or until crisp. Remove bacon from skillet, reserving 2 Tbsp drippings in skillet.
- Add eggs to drippings in skillet, and cook over medium heat, stirring occasionally, until just set. Remove from skillet.
- Cook rice, vegetables, and garlic in hot oil in same skillet 5 minutes or until vegetables are tender. Stir in eggs, bacon, soy sauce, and green onions; cook until thoroughly heated.
