Pan-Seared Grouper with Lemon-Garlic Spinach

Ingredients
- 2 (6-oz) grouper fillets
- 1 Tbsp olive oil
- 1 Tbsp minced garlic
- 1 (5-oz) pkg baby spinach
- ¼ tsp crushed red pepper
- ½ Tbsp fresh lemon juice
Instructions
- Sprinkle fish with salt and pepper, if desired. Cook in hot oil in a large nonstick skillet over medium-high heat 4 to 5 minutes per side; remove from skillet, and keep warm.
- Add garlic to skillet; cook 30 seconds or until lightly browned. Add spinach and red pepper; cook 3 to 4 minutes or until spinach is wilted. Stir in lemon juice. Serve spinach mixture with fish.

- 2 slices bacon, chopped
- ¾ cup frozen lima beans
- ¾ cup frozen corn
- 1½ cups chicken broth
Side Dish Instructions
- Cook bacon in a saucepan over medium heat 5 minutes or until crisp. Remove bacon and drain on paper towels.
- Add lima beans, corn, and broth to drippings in pan. Bring to a boil, reduce heat, and simmer 15 minutes or until beans are tender; sprinkle with bacon.
