Ingredients

  • ½ grapefruit
  • 2 Tbsp olive oil
  • 1 tsp Dijon mustard
  • ¼ tsp honey
  • ⅛ tsp salt
  • ⅛ tsp pepper
  • 1 (5-oz) pkg spring mix
  • 1 cup shredded rotisserie chicken
  • 2 hard cooked eggs, quartered
  • 1 small avocado, sliced
  • ¼ cup thinly sliced red onion
  • ¼ cup coarsely chopped pistachios

Instructions

  1. Peel and section grapefruit over a medium bowl, collecting juices. Add oil, mustard, honey, salt, and pepper to bowl with reserved juices, whisking to combine.
  2. Add greens, grapefruit segments, chicken, eggs, avocado, and onion; toss. Sprinkle with nuts.

Side Dish Ingredients

  • 2 flax, oat bran, and whole wheat pitas
  • 1 Tbsp olive oil
  • ½ tsp Italian seasoning

Side Dish Instructions

  1. Preheat oven to 400°F. Cut pita into wedges; place on a baking sheet. Brush with oil, and sprinkle with seasoning.
  2. Bake 5 to 10 minutes or until toasted.
