Ingredients
- ½ grapefruit
- 2 Tbsp olive oil
- 1 tsp Dijon mustard
- ¼ tsp honey
- ⅛ tsp salt
- ⅛ tsp pepper
- 1 (5-oz) pkg spring mix
- 1 cup shredded rotisserie chicken
- 2 hard cooked eggs, quartered
- 1 small avocado, sliced
- ¼ cup thinly sliced red onion
- ¼ cup coarsely chopped pistachios
Instructions
- Peel and section grapefruit over a medium bowl, collecting juices. Add oil, mustard, honey, salt, and pepper to bowl with reserved juices, whisking to combine.
- Add greens, grapefruit segments, chicken, eggs, avocado, and onion; toss. Sprinkle with nuts.
Side Dish Ingredients
- 2 flax, oat bran, and whole wheat pitas
- 1 Tbsp olive oil
- ½ tsp Italian seasoning
Side Dish Instructions
- Preheat oven to 400°F. Cut pita into wedges; place on a baking sheet. Brush with oil, and sprinkle with seasoning.
- Bake 5 to 10 minutes or until toasted.
