Italian Pork Chop Dinner

Ingredients
- 1½ lb boneless pork chops
- ¼ cup olive oil
- 1 (1-oz) envelope Italian dressing mix
- 3 cloves garlic, minced
- 1 tsp pepper
- 1½ lb small red potatoes, quartered
- 1 lb green beans, cut into 1 inch pieces
- 1 pint grape tomatoes
Instructions
- Preheat oven to 400°F. Place pork on a lightly greased large rimmed baking sheet.
- Whisk together oil, dressing mix, garlic, and pepper in a large bowl. Add potatoes, green beans, and tomatoes; toss. Arrange vegetables around pork. Brush any remaining dressing mixture over pork.
- Bake 25 minutes or until a meat thermometer inserted into thickest portion of pork reads 145°F and vegetables are tender.
