Tropical Salsa with Baked Wonton Chips

Ingredients

  • 1 (14-oz) pkg wonton wrappers, cut into triangles
  • 3 Tbsp lime juice
  • 1 Tbsp honey
  • 1¾ tsp salt, divided
  • 3 cups chopped pineapple
  • 1 mango, chopped
  • 1 red bell pepper, chopped
  • 2 jalapeño peppers, seeded and minced
  • ½ small red onion, minced
  • ½ cup chopped fresh cilantro

Instructions

  1. Preheat oven to 350°F. Arrange wonton wrappers in a single layer on 2 large parchment paper-lined baking sheets; lightly coat with cooking spray. Bake 8 minutes or until chips are lightly browned and crisp. Sprinkle with 1 tsp salt while hot.
  2. Whisk together lime juice, honey, and ¾ tsp salt in a large bowl. Add pineapple, mango, bell pepper, jalapeños, onion, and cilantro, tossing until combined. Cover with plastic wrap, and refrigerate until ready to serve.
  3. Serve salsa with wonton chips.
