Beefy Vegetable Soup
Parmesan Crisps
Ingredients
- ¾ lb ground beef
- ½ (16-oz) pkg frozen vegetables for soup
- 1 (14.5-oz) can diced tomatoes with basil, garlic, and oregano
- 2 cups less sodium beef broth
- ½ cup tomato sauce
- ½ (6-oz) pkg baby spinach
Instructions
- Cook beef in a Dutch oven over medium-high heat until beef is browned and crumbly; drain, and return to pot.
- Add frozen vegetables, tomatoes, broth, and tomato sauce. Bring to a boil; reduce heat, and simmer 15 minutes.
- Gradually stir in spinach until wilted.

- 1 (1.98-oz) pkg Parmesan cheese crisps
Side Dish Instructions
- Serve cheese crisps on the side.
