Beefy Vegetable Soup

Ingredients

  • ¾ lb ground beef
  • ½ (16-oz) pkg frozen vegetables for soup
  • 1 (14.5-oz) can diced tomatoes with basil, garlic, and oregano
  • 2 cups less sodium beef broth
  • ½ cup tomato sauce
  • ½ (6-oz) pkg baby spinach

Instructions

  1. Cook beef in a Dutch oven over medium-high heat until beef is browned and crumbly; drain, and return to pot.
  2. Add frozen vegetables, tomatoes, broth, and tomato sauce. Bring to a boil; reduce heat, and simmer 15 minutes.
  3. Gradually stir in spinach until wilted.

  • 1 (1.98-oz) pkg Parmesan cheese crisps

Side Dish Instructions

  1.  Serve cheese crisps on the side.
