Teriyaki Meatballs with Pineapple

Ingredients

  • 1½ lb ground pork
  • 1½ cups panko breadcrumbs
  • 1½ tsp garlic powder
  • ¼ tsp salt
  • 2 large eggs
  • 2 green onions, thinly sliced
  • 1 (16-oz) container pineapple chunks
  • 2 Tbsp vegetable oil
  • 1 cup teriyaki sauce
  • ½ cup chopped peanuts, optional

Instructions

  1. Preheat oven to 425°F. Combine pork, breadcrumbs, garlic powder, salt, eggs, and green onions in a large bowl; gently mix together using your hands.
  2. Roll pork mixture into 1½-inch balls. Place on two large greased rimmed baking sheets. Bake 15 minutes or until meatballs are no longer pink in center, shaking pans after 5 minutes of baking.
  3. Meanwhile, cut pineapple into bite-sized pieces. Cook pineapple in hot oil in a large skillet over medium-high heat 8 minutes or until browned.
  4. Warm teriyaki sauce in a saucepan over medium heat or in a microwave. Divide Green Onion Rice Noodles recipe among 6 bowls. Top with meatballs, pineapple, and teriyaki sauce. Sprinkle with chopped peanuts, if desired.

  1. Cook rice noodles according to package directions. Drain, and toss with oil and green onions.
