Teriyaki Meatballs with Pineapple
Green Onion Rice Noodles
Ingredients
- 1½ lb ground pork
- 1½ cups panko breadcrumbs
- 1½ tsp garlic powder
- ¼ tsp salt
- 2 large eggs
- 2 green onions, thinly sliced
- 1 (16-oz) container pineapple chunks
- 2 Tbsp vegetable oil
- 1 cup teriyaki sauce
- ½ cup chopped peanuts, optional
Instructions
- Preheat oven to 425°F. Combine pork, breadcrumbs, garlic powder, salt, eggs, and green onions in a large bowl; gently mix together using your hands.
- Roll pork mixture into 1½-inch balls. Place on two large greased rimmed baking sheets. Bake 15 minutes or until meatballs are no longer pink in center, shaking pans after 5 minutes of baking.
- Meanwhile, cut pineapple into bite-sized pieces. Cook pineapple in hot oil in a large skillet over medium-high heat 8 minutes or until browned.
- Warm teriyaki sauce in a saucepan over medium heat or in a microwave. Divide Green Onion Rice Noodles recipe among 6 bowls. Top with meatballs, pineapple, and teriyaki sauce. Sprinkle with chopped peanuts, if desired.

- Cook rice noodles according to package directions. Drain, and toss with oil and green onions.
