Italian Grilled Chicken Pizza Sandwich

Ingredients

  • 2 lb boneless, skinless chicken breasts
  • 1 Tbsp Italian seasoning
  • 2 Tbsp olive oil
  • 6 mozzarella cheese slices
  • 1 (3.5-oz) pkg pepperoni
  • 6 hamburger buns, split
  • 1 cup pasta sauce

Instructions

  1. Preheat grill or grill pan to medium-high heat. Cut chicken in half crosswise and pound to an even thickness between plastic wrap using a meat mallet. Sprinkle chicken with seasoning, and if desired, salt and pepper.
  2. Grill chicken, covered, 5 to 6 minutes per side or until done. Top with cheese and pepperoni. Cover, remove from heat, and let stand until cheese is melted.
  3. Top bottom halves of buns with pasta sauce and chicken; cover with bun tops.

  • 1 (32-oz) pkg frozen potato tots
  • ½ cup grated Parmesan cheese

Side Dish Instructions

  1. Bake or fry potato tots according to package directions; sprinkle with cheese and salt and pepper, if desired.
