Easy Taco Skillet

Ingredients

  • 1 lb ground beef
  • ¼ cup chopped onion
  • ½ Tbsp minced garlic
  • 1½ Tbsp olive oil
  • 1½ Tbsp taco seasoning mix
  • 1 cup diced tomatoes with green chiles
  • 2½ Tbsp water
  • ¾ cup shredded Mexican blend cheese
  • 2¼ cups chopped romaine lettuce
  • ¾ avocado, sliced

Instructions

  1. Cook beef, onion, and garlic in hot oil in a skillet over medium-high heat 8 minutes or until browned and crumbly.
  2. Add taco seasoning, tomatoes, and water; reduce heat to medium-low. Cook 5 minutes or until slightly thickened and thoroughly heated. Remove from heat. Sprinkle with cheese; cover and let stand 2 minutes or until melted.
  3. Serve taco meat over lettuce, and top with avocado.
