Chimichurri Flank Steak
Dill Green Beans and Roasted Potatoes

Ingredients
- 2 lb flank steak, trimmed
- 1½ cups packed fresh parsley leaves
- 3 Tbsp olive oil
- 2 Tbsp minced garlic
- ½ tsp crushed red pepper
- 1 lemon
Instructions
- Preheat grill or grill pan to medium-high heat. Sprinkle steak with salt and pepper, if desired.
- Grill steak, covered, 5 to 7 minutes per side or to desired doneness. Let stand 5 minutes before thinly slicing across the grain.
- Meanwhile, combine parsley, oil, garlic, and crushed red pepper in the container of a blender. Grate zest and squeeze juice from lemon into container; pulse to desired consistency.
- Serve chimichurri over sliced flank steak.

- 1 shallot, thinly sliced
- 2 Tbsp olive oil
- 2 (10-oz) pkg frozen thin green beans
- 2 Tbsp chopped fresh dill
- 1 (22-oz) pkg frozen roasted garlic red potatoes
Side Dish Instructions
- Cook shallot in hot oil in a nonstick skillet over medium heat until tender.
- Steam green beans according to package directions; toss with shallot mixture and dill. Season with salt and pepper, if desired.
- Bake potatoes according to package directions.
