Ingredients

  • 2 lb flank steak, trimmed
  • 1½ cups packed fresh parsley leaves
  • 3 Tbsp olive oil
  • 2 Tbsp minced garlic
  • ½ tsp crushed red pepper
  • 1 lemon

Instructions

  1. Preheat grill or grill pan to medium-high heat. Sprinkle steak with salt and pepper, if desired.
  2. Grill steak, covered, 5 to 7 minutes per side or to desired doneness. Let stand 5 minutes before thinly slicing across the grain.
  3. Meanwhile, combine parsley, oil, garlic, and crushed red pepper in the container of a blender. Grate zest and squeeze juice from lemon into container; pulse to desired consistency.
  4. Serve chimichurri over sliced flank steak.

  • 1 shallot, thinly sliced
  • 2 Tbsp olive oil
  • 2 (10-oz) pkg frozen thin green beans
  • 2 Tbsp chopped fresh dill
  • 1 (22-oz) pkg frozen roasted garlic red potatoes

Side Dish Instructions

  1. Cook shallot in hot oil in a nonstick skillet over medium heat until tender.
  2. Steam green beans according to package directions; toss with shallot mixture and dill. Season with salt and pepper, if desired.
  3. Bake potatoes according to package directions.
