Fruity Cereal Cupcakes

Ingredients

  • 3 cups cake flour
  • 1 Tbsp baking powder
  • ¼ tsp salt
  • 2¼ cups butter, softened and divided
  • 1 cup granulated sugar
  • 1 cup milk
  • 4 egg whites
  • 1 Tbsp plus 2 tsp vanilla extract, divided
  • 3½ cups powdered sugar
  • 2 Tbsp heavy cream
  • 1 (11-oz) box fruity kids cereal

Instructions

  1. Preheat oven to 375°F. Line a 12-cup muffin pan with paper liners. Whisk together flour, baking powder, and salt in a bowl.
  2. Beat ¾ cup butter and granulated sugar in a large bowl at medium speed with a mixer until light and fluffy.  Beat in milk, egg whites, and 1 Tbsp vanilla until smooth .
  3. Gradually beat in flour mixture just until combined. Divide batter between prepared muffin cups, filling each about three-fourths full.
  4. Bake 18 to 20 minutes or until a wooden pick inserted into center of cupcakes comes out clean. Let cool in pan 10 minutes. Remove cupakes to a wire rack to cool completely.
  5. Meanwhile, beat 1½ cups butter in a large bowl at medium-high speed with a mixer until light and fluffy. Gradually beat in powdered sugar until blended. Beat in cream and 2 tsp vanilla. Stir in 2 cups cereal until blended.
  6. Spread or pipe frosting onto cooled cupcakes. Sprinkle with additional cereal, if desired.
