Pesto-Mozzarella Couscous

Ingredients

  • 2 cups Israeli pearl couscous
  • 1 (6-oz) jar pesto
  • 1 (8-oz) pkg fresh mozzarella cheese pearls
  • 1 pint grape tomatoes, halved
  • ½ cup chopped fresh basil
  • 3 Tbsp vegan balsamic glaze

Instructions

  1. Cook couscous according to package directions; rinse under cold water to cool, and drain. Stir together couscous and pesto in a large bowl.
  2. Add cheese, tomatoes, and basil, tossing to combine. Drizzle with balsamic glaze.
