Ingredients

  • 2 lb ground beef
  • ½ onion, chopped
  • 1 Tbsp minced garlic
  • 3 Tbsp olive oil
  • 3 Tbsp taco seasoning mix
  • 1½ (10-oz) cans diced tomatoes with green chiles
  • ⅓ cup water
  • 1½ cups shredded Mexican blend cheese
  • 4½ cups chopped romaine lettuce
  • 1½ avocados, sliced

Instructions

  1. Cook beef, onion, and garlic in hot oil in a large skillet over medium-high heat 8 minutes or until browned and crumbly.
  2. Add taco seasoning, tomatoes, and water; reduce heat to medium-low. Cook 5 minutes or until slightly thickened and thoroughly heated. Remove from heat. Sprinkle with cheese; cover and let stand 2 minutes or until melted.
  3. Serve taco meat over lettuce, and top with avocado.
