Crunchy Salmon with Spicy Mayo
Brown Rice and Sesame Snow Peas

Ingredients
- ¾ lb salmon fillets
- ⅛ tsp salt
- ⅓ cup panko breadcrumbs
- 1 tsp sesame oil
- ¼ tsp garlic powder
- ¼ tsp onion powder
- 1½ Tbsp mayonnaise
- 1 Tbsp Sriracha
- 1 green onion, thinly sliced
Instructions
- Preheat oven to 450°F. Place fish on a rimmed baking sheet coated with cooking spray. Sprinkle with salt.
- Toss together breadcrumbs, oil, garlic powder, and onion powder. Press mixture onto fish fillets. Bake 15 minutes or until fish flakes with a fork.
- Meanwhile, stir together mayonnaise and Sriracha, thinning with water, if needed to reach a pourable consistency. Drizzle over fish; sprinkle with green onion.

- 1 (3.5-oz) pouch boil in bag brown rice
- 1 (8-oz) pkg snow peas
- 1 Tbsp less sodium soy sauce
- 1 tsp sesame seeds

- Cook rice according to package directions.
- Cook snow peas according to package directions. Stir in soy sauce and sesame seeds.
