Philly Cheesesteak Tacos

Ingredients

  • ½ lb flank steak, trimmed
  • ⅛ tsp salt
  • ⅛ tsp pepper
  • 1 Tbsp canola oil, divided
  • 1 small onion, sliced 
  • 1 small red or green bell pepper, cut into strips
  • 4 corn tortillas, heated
  • ¼ cup shredded mozzarella cheese

Instructions

  1. Sprinkle steak with salt and pepper. Cook in ½ Tbsp hot oil in a large skillet over medium-high heat 4 to 5 minutes per side or to desired doneness. Remove from skillet. Let stand 5 minutes; thinly slice across the grain.
  2. Cook onion and bell pepper in ½ Tbsp hot oil in same skillet over medium-high heat 8 minutes or until tender. Add beef to skillet, tossing to combine.
  3. Serve beef mixture in tortillas; sprinkle with cheese.
