Coffee-Marinated Grilled Pork Chops

Ingredients

  • 1 Tbsp water
  • 1 Tbsp fresh orange juice
  • 1½ Tbsp finely ground coffee
  • 1 Tbsp smoked paprika
  • ¼ tsp salt
  • ¾ lb boneless pork chops

Instructions

  1. Whisk together water, orange juice, coffee, paprika, and salt in a bowl; rub over pork. Chill 30 minutes to 2 hours.
  2. Preheat grill to medium-high heat. Grill pork on a grill rack rubbed with oil, covered, 4 minutes per side or until done.

Side Dish Ingredients

  • 1 (8-oz) pkg thin green beans
  • ¾ large head red cabbage, cut into 2 wedges
  • ½ Tbsp avocado oil
  • 2 Tbsp avocado oil mayonnaise
  • 1 Tbsp apple cider vinegar
  • 1 to 2 Tbsp water
  • ½ Tbsp raw honey
  • 1 green onion, chopped

Side Dish Instructions

  1. Prepare green beans according to package directions.
  2. Preheat grill to medium-high heat. Brush cabbage with oil; sprinkle with salt and pepper, if desired. Grill on a grill rack rubbed with oil, covered, 12 minutes or until charred, turning occasionally.
  3. Combine mayonnaise, vinegar, water, and honey. Drizzle over cabbage; sprinkle with onion.
