Baked Jerk Chicken Drumsticks

Ingredients
- 1 orange
- 1 lemon
- 3 lb chicken drumsticks
- 2 Tbsp chopped fresh oregano
- 4 cloves garlic, minced
- 2 Tbsp Jerk seasoning
- ½ tsp salt
- ½ tsp pepper
Instructions
- Grate zest and squeeze juice from orange and lemon. Combine chicken, orange and lemon zest and juices, oregano, and garlic in a large zip-top plastic bag. Refrigerate at least 4 hours.
- Preheat oven to 375°F. Remove chicken from marinade, reserving marinade.
- Place chicken on a large foil-lined rimmed baking sheet coated with cooking spray. Sprinkle with seasoning, salt, and pepper.
- Bake 35 to 40 minutes or until chicken is done, turning after 20 minutes.
- Meanwhile, bring reserved marinade to a boil in a small saucepan; boil 2 minutes or until thickened; drizzle over chicken.

- 2 Tbsp olive oil
- 1½ (15-oz) cans black beans, rinsed and drained
- ½ cup refrigerated salsa
- 2 Tbsp chopped fresh cilantro
Side Dish Instructions
- Cook garlic in hot oil in a large skillet over medium heat 30 seconds or until fragrant. Stir in beans and salsa; cook 3 minutes or until thoroughly heated. Sprinkle with cilantro.
