Ingredients

  • 1 orange
  • 1 lemon
  • 3 lb chicken drumsticks
  • 2 Tbsp chopped fresh oregano
  • 4 cloves garlic, minced
  • 2 Tbsp Jerk seasoning
  • ½ tsp salt
  • ½ tsp pepper

Instructions

  1. Grate zest and squeeze juice from orange and lemon. Combine chicken, orange and lemon zest and juices, oregano, and garlic in a large zip-top plastic bag. Refrigerate at least 4 hours.
  2. Preheat oven to 375°F. Remove chicken from marinade, reserving marinade.
  3. Place chicken on a large foil-lined rimmed baking sheet coated with cooking spray. Sprinkle with seasoning, salt, and pepper.
  4. Bake 35 to 40 minutes or until chicken is done, turning after 20 minutes.
  5. Meanwhile, bring reserved marinade to a boil in a small saucepan; boil 2 minutes or until thickened; drizzle over chicken.

  • 2 cloves garlic, minced
  • 2 Tbsp olive oil
  • 1½ (15-oz) cans black beans, rinsed and drained
  • ½ cup refrigerated salsa
  • 2 Tbsp chopped fresh cilantro

Side Dish Instructions

  1. Cook garlic in hot oil in a large skillet over medium heat 30 seconds or until fragrant. Stir in beans and salsa; cook 3 minutes or until thoroughly heated. Sprinkle with cilantro.
