Hawaiian Chicken Kabobs

Brown Sugar Green Beans and Scalloped Potatoes

Ingredients

  • ½ cup honey barbecue sauce
  • ⅓ cup soy sauce
  • 1 Tbsp rice vinegar
  • 1 Tbsp sesame oil
  • 1 tsp ground ginger
  • 2 lb boneless, skinless chicken breasts, cut into 1½-inch cubes
  • 1 peeled and cored pineapple, cut into 1½-inch cubes

Instructions

  1. Preheat grill or grill pan to medium-high heat. Whisk together barbecue sauce, soy sauce, vinegar, oil, and ginger in a small bowl.
  2. Skewer chicken and pineapple on metal skewers as desired; place on a baking sheet, and brush with half of sauce.
  3. Grill skewers on greased grill rack 5 to 6 minutes per side or until chicken is done, basting with reserved sauce halfway through grilling.

Side Dish Ingredients

  • 2 (14.5-oz) cans cut green beans, drained and rinsed
  • ½ cup packed brown sugar
  • 6 Tbsp butter, melted, and divided
  • ½ tsp garlic powder
  • 2 (4.7-oz) pkg scalloped potatoes
  • 4 cups boiling water
  • 1⅓ cups milk

Side Dish Instructions

  1. Preheat oven to 400°F. Stir together beans, sugar, 4 Tbsp melted butter, and garlic powder in a baking dish. Bake 20 minutes.
  2. Cook potatoes according to package directions using boiling water, milk, and 2 Tbsp melted butter.
