Bruschetta Pasta

Ingredients

  • 1 (16-oz) pkg spaghetti
  • 1 (10-oz) pkg spinach
  • 2 cloves garlic, minced
  • 3 Tbsp olive oil
  • 3 Tbsp balsamic vinegar
  • 4 tomatoes, diced
  • ¼ cup chopped fresh basil
  • ¾ tsp salt
  • ¾ tsp pepper
  • ½ cup shredded Parmesan cheese

Instructions

  1. Cook pasta according to package directions; drain, reserving ½ cup pasta water.
  2. Cook spinach and garlic in hot oil in a large nonstick skillet over medium heat, stirring often, until spinach wilts.
  3. Add vinegar, tomatoes, basil, salt, and pepper; cook 1 minute. Add hot pasta and enough pasta water to make a thin sauce; toss. Sprinkle with cheese.

  • ½ (14-oz) French bread
  • 3 Tbsp olive oil
  • 1½ tsp dried thyme

Side Dish Instructions

  1. Preheat broiler. Cut bread in half lengthwise, and place, cut sides up, on a baking sheet. Drizzle with oil; sprinkle with thyme. Broil 2 to 3 minutes or until toasted.
