Bruschetta Pasta
Herbed French BreadIngredients
- 1 (16-oz) pkg spaghetti
- 1 (10-oz) pkg spinach
- 2 cloves garlic, minced
- 3 Tbsp olive oil
- 3 Tbsp balsamic vinegar
- 4 tomatoes, diced
- ¼ cup chopped fresh basil
- ¾ tsp salt
- ¾ tsp pepper
- ½ cup shredded Parmesan cheese
Instructions
- Cook pasta according to package directions; drain, reserving ½ cup pasta water.
- Cook spinach and garlic in hot oil in a large nonstick skillet over medium heat, stirring often, until spinach wilts.
- Add vinegar, tomatoes, basil, salt, and pepper; cook 1 minute. Add hot pasta and enough pasta water to make a thin sauce; toss. Sprinkle with cheese.

- ½ (14-oz) French bread
- 3 Tbsp olive oil
- 1½ tsp dried thyme
Side Dish Instructions
- Preheat broiler. Cut bread in half lengthwise, and place, cut sides up, on a baking sheet. Drizzle with oil; sprinkle with thyme. Broil 2 to 3 minutes or until toasted.
