Vegetable Noodle Bowl
Wonton StripsIngredients
- 2 (8.4-oz) pkg organic ramen noodles
- 2 red bell peppers, sliced
- 3 green onions, chopped and divided
- 2 cloves garlic, sliced
- 2 Tbsp sesame oil
- 1½ (32-oz) cartons vegetable broth
- 1 (12-oz) pkg frozen peas and carrots
- 1 (12-oz) pkg broccoli florets, cut into bite size pieces
- 3 Tbsp vegan hoisin sauce
- 2 Tbsp less sodium soy sauce
Instructions
- Cook noodles according to package directions.
- Meanwhile, cook bell peppers, white parts of green onions, and garlic in hot oil in a large Dutch oven over medium heat 5 minutes.
- Stir in broth, peas and carrots, broccoli, hoisin sauce, and soy sauce; bring to a boil, reduce heat, and simmer 8 minutes.
- Stir in green onion tops and cooked noodles; simmer 2 minutes.

- 1 (3.5-oz) pkg wonton strips

- Serve wonton strips on the side.
