Italian Red Pepper Pork Chops
Grilled Green Tomatoes with Basil
Ingredients
- ¾ lb boneless pork chops
- 1 Tbsp olive oil
- ¼ tsp garlic salt, divided
- ¼ tsp pepper, divided
- ½ cup roasted red peppers
- ¼ cup less sodium chicken broth
- ¼ cup sliced almonds
- 1 Tbsp chopped fresh thyme
- ½ Tbsp balsamic vinegar
Instructions
- Preheat grill or grill pan to medium-high heat. Brush pork with oil; sprinkle with ⅛ tsp each garlic salt and pepper. Grill, covered, 4 to 5 minutes per side or until done.
- Process roasted peppers, broth, nuts, thyme, vinegar, and ⅛ tsp each garlic salt and pepper in a blender or miniature food processor until smooth. Transfer mixture to a small saucepan; bring to a simmer, and cook over medium heat 5 minutes or until thickened. Serve red pepper sauce with pork.

- 3 Tbsp chopped fresh basil
Side Dish Instructions
- Preheat grill or grill pan to medium-high heat. Brush tomatoes with oil, and sprinkle with garlic salt and pepper.
- Grill tomatoes, covered, 3 minutes per side or until grill marks appear. Sprinkle with basil.
