Italian Red Pepper Pork Chops

Ingredients

  • ¾ lb boneless pork chops
  • 1 Tbsp olive oil
  • ¼ tsp garlic salt, divided
  • ¼ tsp pepper, divided
  • ½ cup roasted red peppers
  • ¼ cup less sodium chicken broth
  • ¼ cup sliced almonds
  • 1 Tbsp chopped fresh thyme
  • ½ Tbsp balsamic vinegar

Instructions

  1. Preheat grill or grill pan to medium-high heat. Brush pork with oil; sprinkle with ⅛ tsp each garlic salt and pepper. Grill, covered, 4 to 5 minutes per side or until done.
  2. Process roasted peppers, broth, nuts, thyme, vinegar, and ⅛ tsp each garlic salt and pepper in a blender or miniature food processor until smooth. Transfer mixture to a small saucepan; bring to a simmer, and cook over medium heat 5 minutes or until thickened. Serve red pepper sauce with pork.

  • ⅛ tsp pepper
  • 3 Tbsp chopped fresh basil

Side Dish Instructions

  1. Preheat grill or grill pan to medium-high heat. Brush tomatoes with oil, and sprinkle with garlic salt and pepper.
  2. Grill tomatoes, covered, 3 minutes per side or until grill marks appear. Sprinkle with basil.
