Veggie-Cheddar Mini Quiches

Ingredients

  • 6 large eggs
  • ½ cup milk
  • ⅛ tsp salt
  • ⅛ tsp pepper
  • 1 Tbsp butter
  • ¼ cup chopped red onion
  • 1 zucchini, chopped
  • ½ red bell pepper, chopped
  • ½ cup shredded Cheddar cheese

Instructions

  1. Preheat oven to 350°F. Whisk together eggs, milk, salt, and pepper in a medium bowl.
  2. Melt butter in a skillet over medium heat. Add onion; cook 10 minutes or until browned and tender, stirring occasionally.
  3. Add zucchini and bell pepper; cook 3 to 4 minutes or until tender. Stir vegetables into egg mixture.
  4. Divide mixture among cups of a lightly greased 6-cup muffin pan.
  5. Bake 20 to 22 minutes or eggs are set. Sprinkle with cheese. Cool in pan 4 minutes; run a knife around edges of muffin cups to loosen.

  • ½ (10-oz) pkg butter lettuce salad blend
  • 1 cup sliced celery
  • ½ cup celery leaves
  • ½ cup quartered strawberries
  • ½ cup fresh parsley leaves
  • ¼ cup fresh basil leaves
  • ¼ cup refrigerated lemon vinaigrette

Side Dish Instructions

  1. Toss together all ingredients in a medium bowl.
