Slow Cooker Buffalo Chicken Lettuce Wraps

Ingredients

  • 2½ lb bone in, skin on chicken thighs, skinned
  • ½ cup buffalo wing sauce
  • ½ cup butter, melted
  • 2 Tbsp white vinegar
  • 2 tsp onion powder
  • ¾ cup Ranch dressing
  • ¼ cup crumbled blue cheese
  • 12 large green leaf lettuce leaves
  • ½ cup finely diced celery

Instructions

  1. Toss together chicken and wing sauce in a greased 5-or 6-quart slow cooker.
  2. Combine butter, vinegar, and onion powder. Pour over chicken in cooker.
  3. Cover and cook on LOW 6 to 7 hours or until chicken is done. Remove chicken from cooker; shred meat with 2 forks, discarding bones. Return meat to cooker.
  4. Combine dressing and cheese in a small bowl.
  5. Spoon chicken mixture onto lettuce leaves. Top with celery and dressing.

Side Dish Ingredients

  • 2 cucumbers, thinly sliced
  • 3 Tbsp sour cream
  • 2 Tbsp red wine vinegar
  • ½ onion, finely chopped

Side Dish Instructions

  1. Combine cucumbers, sour cream, vinegar, and onion in a large bowl. Chill until ready to serve.
