Prosciutto and Pea Tortellini Salad

Ingredients

  • 1 (10-oz) pkg refrigerated three cheese tortellini
  • 1 cup frozen peas
  • ½ lb asparagus, trimmed and cut into 2-inch pieces
  • 4 oz sliced prosciutto, torn
  • 2 oz mozzarella cheese, cut into small cubes
  • ¼ cup balsamic vinaigrette

Instructions

  1. Cook tortellini according to package directions, adding peas and asparagus during last 2 minutes of cooking; rinse under cold water to cool, and drain well.
  2. Toss together tortellini mixture, prosciutto, cheese, and vinaigrette in a large bowl. Chill until ready to serve.

  1. Serve berries on the side.
