Prosciutto and Pea Tortellini Salad
Fresh StrawberriesIngredients
- 1 (10-oz) pkg refrigerated three cheese tortellini
- 1 cup frozen peas
- ½ lb asparagus, trimmed and cut into 2-inch pieces
- 4 oz sliced prosciutto, torn
- 2 oz mozzarella cheese, cut into small cubes
- ¼ cup balsamic vinaigrette
Instructions
- Cook tortellini according to package directions, adding peas and asparagus during last 2 minutes of cooking; rinse under cold water to cool, and drain well.
- Toss together tortellini mixture, prosciutto, cheese, and vinaigrette in a large bowl. Chill until ready to serve.
