Ingredients
- 12 slices whole grain bread
- 1½ (8-oz) balls fresh mozzarella cheese, sliced
- 3 Roma tomatoes, sliced
- 1½ cups fresh basil leaves
- 3 Tbsp balsamic glaze
- ½ tsp kosher salt
- ½ tsp pepper
Instructions
- Top 6 bread slices with cheese, tomatoes, and basil; drizzle with glaze, and sprinkle with salt and pepper. Cover with remaining 6 bread slices to assemble sandwiches. Lightly coat outsides of sandwiches with cooking spray.
- Cook sandwiches, in batches, in a large skillet (or a panini press) over medium heat, pressing sandwiches down using a heavy skillet, 2 to 3 minutes per side or until toasted.

- Serve grapes on the side.
