Ingredients

  • 12 slices whole grain bread
  • 1½ (8-oz) balls fresh mozzarella cheese, sliced
  • 3 Roma tomatoes, sliced
  • 1½ cups fresh basil leaves
  • 3 Tbsp balsamic glaze
  • ½ tsp kosher salt
  • ½ tsp pepper

Instructions

  1. Top 6 bread slices with cheese, tomatoes, and basil; drizzle with glaze, and sprinkle with salt and pepper. Cover with remaining 6 bread slices to assemble sandwiches. Lightly coat outsides of sandwiches with cooking spray.
  2. Cook sandwiches, in batches, in a large skillet (or a panini press) over medium heat, pressing sandwiches down using a heavy skillet, 2 to 3 minutes per side or until toasted.

  • 3 cups seedless red grapes, chilled

Side Dish Instructions

  1. Serve grapes on the side.
