Loaded Hash Browns

Ingredients

  • 1 Tbsp flaxseed meal
  • 2½ Tbsp water
  • 1 (20-oz) pkg refrigerated hash browns
  • ½ cup vegan shredded Cheddar cheese
  • 3 green onions, sliced
  • 2 Tbsp nutritional yeast
  • 2 Tbsp olive oil
  • ½ tsp garlic salt
  • 2 (14.7-oz) cans vegetarian chili
  • 1 (8-oz) pkg shredded lettuce
  • 2 tomatoes, diced
  • ½ cup vegan sour cream

Instructions

  1. Preheat oven to 400°F. Stir together flaxseed meal and water in a small bowl. Let stand 5 minutes or until thickened.
  2. Combine hash browns, flaxseed meal mixture, cheese, onions, nutritional yeast, oil, and garlic salt in a large bowl, stirring until blended.
  3. Spread hash browns mixture in an even layer on a large greased rimmed baking sheet; lightly coat cooking spray. Bake 25 to 30 minutes or until crispy.
  4. Meanwhile, heat chili according to package directions.
  5. Serve hash browns topped with chili, lettuce, tomatoes, and sour cream.
