Mustard-Rosemary Pork Chops

Ingredients

  • ¾ lb boneless pork chops
  • 2 tsp olive oil
  • ⅔ cup less sodium chicken broth
  • 1 Tbsp capers
  • ½ Tbsp whole grain mustard
  • ⅛ tsp dried crushed rosemary

Instructions

  1. Season pork chops with salt and pepper, if desired. Cook pork in hot oil in a nonstick skillet over medium-high heat 2 minutes per side or until browned.
  2. Add broth; bring to a boil. Stir in capers, mustard, and rosemary; reduce heat, and simmer until sauce is reduced by half and pork is done.

Side Dish Ingredients

  • 1 sweet potato
  • 2 Tbsp butter
  • 1 tsp brown sugar
  • ½ tsp ground cinnamon
  • 1 (8-oz) pkg thin green beans
  • ⅛ tsp salt
  • ⅛ tsp pepper

Side Dish Instructions

  1. Pierce potato 8 to 10 times with a fork. Wrap in damp paper towels, and place on a microwave-safe dish.
  2. Microwave at HIGH 10 minutes or until potato is tender, turning after 5 minutes. Cool slightly, and cut potato in half lengthwise.
  3. Top each half with butter, and sprinkle with sugar and cinnamon.
  4. Cook green beans according to package directions. Sprinkle with salt and pepper.
