Mustard-Rosemary Pork Chops
Baked Sweet Potatoes and Green Beans

Ingredients
- ¾ lb boneless pork chops
- 2 tsp olive oil
- ⅔ cup less sodium chicken broth
- 1 Tbsp capers
- ½ Tbsp whole grain mustard
- ⅛ tsp dried crushed rosemary
Instructions
- Season pork chops with salt and pepper, if desired. Cook pork in hot oil in a nonstick skillet over medium-high heat 2 minutes per side or until browned.
- Add broth; bring to a boil. Stir in capers, mustard, and rosemary; reduce heat, and simmer until sauce is reduced by half and pork is done.
Side Dish Ingredients
- 1 sweet potato
- 2 Tbsp butter
- 1 tsp brown sugar
- ½ tsp ground cinnamon
- 1 (8-oz) pkg thin green beans
- ⅛ tsp salt
- ⅛ tsp pepper
Side Dish Instructions
- Pierce potato 8 to 10 times with a fork. Wrap in damp paper towels, and place on a microwave-safe dish.
- Microwave at HIGH 10 minutes or until potato is tender, turning after 5 minutes. Cool slightly, and cut potato in half lengthwise.
- Top each half with butter, and sprinkle with sugar and cinnamon.
- Cook green beans according to package directions. Sprinkle with salt and pepper.
