Ingredients

  • 12 oz orzo
  • ¾ cup chopped sun dried tomatoes in oil, drained
  • 1 (14-oz) can artichoke hearts, drained
  • 3 cloves garlic, minced
  • 2 Tbsp olive oil
  • 1 (5-oz) pkg spinach
  • ¾ cup lemon vinaigrette
  • 3 Tbsp capers

Instructions

  1. Cook orzo according to package directions.
  2. Cook tomatoes, artichokes, and garlic in hot oil in a large skillet over medium-high heat 5 minutes. Add spinach; cook 2 minutes or until spinach wilts. Remove from heat.
  3. Add orzo, vinaigrette, and capers to vegetable mixture, tossing to combine.

Side Dish Ingredients

  • 10 oz French bread
  • ¼ cup butter, softened
  • 1½ tsp Italian seasoning

Side Dish Instructions

  1. Preheat broiler. Cut bread in half lengthwise; place on a baking sheet. Broil 2 minutes or until toasted.
  2. Stir together butter and Italian seasoning. Serve herb butter with bread.
