Sun-Dried Tomato and Caper Orzo
French Bread with Herb Butter

Ingredients
- 12 oz orzo
- ¾ cup chopped sun dried tomatoes in oil, drained
- 1 (14-oz) can artichoke hearts, drained
- 3 cloves garlic, minced
- 2 Tbsp olive oil
- 1 (5-oz) pkg spinach
- ¾ cup lemon vinaigrette
- 3 Tbsp capers
Instructions
- Cook orzo according to package directions.
- Cook tomatoes, artichokes, and garlic in hot oil in a large skillet over medium-high heat 5 minutes. Add spinach; cook 2 minutes or until spinach wilts. Remove from heat.
- Add orzo, vinaigrette, and capers to vegetable mixture, tossing to combine.
Side Dish Ingredients
- 10 oz French bread
- ¼ cup butter, softened
- 1½ tsp Italian seasoning
Side Dish Instructions
- Preheat broiler. Cut bread in half lengthwise; place on a baking sheet. Broil 2 minutes or until toasted.
- Stir together butter and Italian seasoning. Serve herb butter with bread.
