Ingredients

  • 2¼ lb grouper fillets
  • ½ tsp salt
  • ½ tsp pepper
  • 3 Key limes
  • ⅓ cup mayonnaise
  • ⅓ cup plain Greek yogurt
  • ¼ cup chopped fresh cilantro
  • 1 Tbsp Worcestershire sauce

Instructions

  1. Preheat oven to 425°F. Place fish on a greased rimmed baking sheet; sprinkle with salt and pepper. Bake 15 to 20 minutes or until fish flakes with a fork.
  2. Meanwhile, grate zest and squeeze juice from limes. Stir together lime zest, lime juice, mayonnaise, yogurt, cilantro, and Worcestershire. Serve sauce with fish.

  • ½ cup chopped fresh cilantro
  • 2 Tbsp olive oil
  • ½ tsp salt
  • ½ tsp pepper
  • 2 Tbsp butter
  • 1 (16-oz) pkg fresh cubed pineapple
  • 3 Tbsp brown sugar

Side Dish Instructions

  1. Cook rice according to package directions. Stir in cilantro, oil, salt, and pepper.
  2. Meanwhile, melt butter in a large skillet over medium heat. Add pineapple and sugar; cook 8 to 10 minutes or until pineapple is browned.
