Grouper with Key Lime Sauce
Cilantro Rice and Charred Pineapple

Ingredients
- 2¼ lb grouper fillets
- ½ tsp salt
- ½ tsp pepper
- 3 Key limes
- ⅓ cup mayonnaise
- ⅓ cup plain Greek yogurt
- ¼ cup chopped fresh cilantro
- 1 Tbsp Worcestershire sauce
Instructions
- Preheat oven to 425°F. Place fish on a greased rimmed baking sheet; sprinkle with salt and pepper. Bake 15 to 20 minutes or until fish flakes with a fork.
- Meanwhile, grate zest and squeeze juice from limes. Stir together lime zest, lime juice, mayonnaise, yogurt, cilantro, and Worcestershire. Serve sauce with fish.

- 3 (3.5-oz) pouches boil in bag brown rice
- ½ cup chopped fresh cilantro
- 2 Tbsp olive oil
- ½ tsp salt
- ½ tsp pepper
- 2 Tbsp butter
- 1 (16-oz) pkg fresh cubed pineapple
- 3 Tbsp brown sugar
Side Dish Instructions
- Cook rice according to package directions. Stir in cilantro, oil, salt, and pepper.
- Meanwhile, melt butter in a large skillet over medium heat. Add pineapple and sugar; cook 8 to 10 minutes or until pineapple is browned.
