Ingredients
- 2¼ lb boneless, skinless chicken breasts
- ½ tsp salt
- ½ tsp pepper
- 1 Tbsp olive oil
- 2 Tbsp butter
- ¾ cup panko breadcrumbs
- ¾ cup chopped almonds
- 1 tsp Italian seasoning
- 2 tsp lemon zest
Instructions
- Preheat oven to 425°F. Sprinkle chicken with salt and pepper. Cook chicken, in batches, in 1 Tbsp hot oil in a large skillet over medium-high heat 2 minutes per side or until browned.
- Place chicken on a foil-lined baking sheet. Bake 10 minutes or until done.
- Meanwhile, melt butter in a skillet over medium heat. Add breadcrumbs, nuts, and seasoning; cook 2 to 3 minutes or until nuts are toasted and fragrant. Stir in lemon zest. Sprinkle nut mixture over chicken.

- 2 (3.5-oz) pkg boil in bag brown rice
- 1 (16-oz) pkg sugar snap peas
- 2 Tbsp olive oil
- 2 Tbsp lemon juice
- ½ tsp salt
Side Dish Instructions
- Cook rice according to package directions.
- Meanwhile, cook peas in hot oil in a large skillet over medium-high heat 6 to 8 minutes or until browned and tender. Stir in lemon juice and salt.
