Ingredients

  • 2¼ lb boneless, skinless chicken breasts
  • ½ tsp salt
  • ½ tsp pepper
  • 1 Tbsp olive oil
  • 2 Tbsp butter
  • ¾ cup panko breadcrumbs
  • ¾ cup chopped almonds
  • 1 tsp Italian seasoning
  • 2 tsp lemon zest

Instructions

  1. Preheat oven to 425°F. Sprinkle chicken with salt and pepper. Cook chicken, in batches, in 1 Tbsp hot oil in a large skillet over medium-high heat 2 minutes per side or until browned.
  2. Place chicken on a foil-lined baking sheet. Bake 10 minutes or until done.
  3. Meanwhile, melt butter in a skillet over medium heat. Add breadcrumbs, nuts, and seasoning; cook 2 to 3 minutes or until nuts are toasted and fragrant. Stir in lemon zest. Sprinkle nut mixture over chicken.

  • 2 (3.5-oz) pkg boil in bag brown rice
  • 1 (16-oz) pkg sugar snap peas
  • 2 Tbsp olive oil
  • 2 Tbsp lemon juice
  • ½ tsp salt

Side Dish Instructions

  1. Cook rice according to package directions.
  2. Meanwhile, cook peas in hot oil in a large skillet over medium-high heat 6 to 8 minutes or until browned and tender. Stir in lemon juice and salt.
