Roasted Green Beans with Ranch

Ingredients

  • ½ lb ground beef
  • 1 cup marinara sauce
  • ½ tsp garlic powder
  • 1 Tbsp olive oil
  • 2 burrito flour tortillas
  • ½ cup shredded mozzarella cheese
  • ¼ cup shredded Parmesan cheese

Instructions

  1. Preheat oven to 400°F. Cook beef in a skillet over medium heat until browned and crumbly; drain, and return to skillet. Stir in marinara sauce and garlic powder.
  2. Brush one side of tortillas with oil; place, oiled sides down, on a rimmed baking sheet.
  3. Divide beef mixture among tortillas, placing ingredients on one half of each tortilla. Top with cheeses. Fold tortillas in half.
  4. Bake 6 minutes, and flip. Bake 6 to 7 minutes longer or until tortillas are browned and cheese melts. Cut into wedges.

Side Dish Ingredients

  • 1 (12-oz) pkg green beans
  • 1 Tbsp olive oil
  • ¼ tsp kosher salt
  • ¼ tsp pepper
  • ¼ cup Ranch dressing

Side Dish Instructions

  1. Preheat oven to 400°F. Combine all ingredients except dressing on a rimmed baking sheet; spread in a single layer.
  2. Bake 15 minutes or until green beans are well browned. Serve with dressing for dipping.
