Loaded Potato Gnocchi

Ingredients

  • ¼ cup butter, divided
  • 2 (16-oz) pkg potato gnocchi 
  • 1 (15-oz) can nacho cheese sauce 
  • ¾ cup sour cream
  • ¼ cup real bacon pieces
  • ¼ cup shredded Parmesan cheese

Instructions

  1. Melt 2 Tbsp butter in a large nonstick skillet over medium heat. Add half of gnocchi and cook 8 minutes or until toasted, stirring occasionally. Remove from skillet and keep warm. Repeat with remaining butter and gnocchi.
  2. Meanwhile, heat cheese sauce according to package directions.
  3. Divide gnocchi among 6 shallow bowls. Drizzle with hot cheese sauce; top with sour cream, bacon, and Parmesan.

  • 2 (8-oz) pkg thin green beans
  • 2 Tbsp olive oil
  • ¾ tsp garlic powder
  • ½ tsp salt
  • ½ tsp pepper

Side Dish Instructions

  1. Steam beans according to package directions. Toss with oil, garlic powder, salt, and pepper.
