Bruschetta Pasta
Herbed French Bread
Ingredients
- 4 oz spaghetti
- 2 cups spinach
- 1 small clove garlic, minced
- 1 Tbsp olive oil
- 1 Tbsp balsamic vinegar
- 1 tomato, diced
- 2 Tbsp chopped fresh basil
- ¼ tsp salt
- ¼ tsp pepper
- ¼ cup shredded Parmesan cheese
Instructions
- Cook pasta according to package directions; drain, reserving ¼ cup pasta water.
- Cook spinach and garlic in hot oil in a nonstick skillet over medium heat, stirring often, until spinach wilts.
- Add vinegar, tomatoes, basil, salt, and pepper; cook 1 minute. Add hot pasta and enough pasta water to make a thin sauce; toss. Sprinkle with cheese.

- 4 oz French bread
- 1 Tbsp olive oil
- ½ tsp dried thyme
Side Dish Instructions
- Preheat broiler. Cut bread in half lengthwise, and place, cut sides up, on a small baking sheet. Drizzle with oil; sprinkle with thyme. Broil 2 to 3 minutes or until toasted.
