Bruschetta Pasta

Ingredients

  • 4 oz spaghetti
  • 2 cups spinach
  • 1 small clove garlic, minced
  • 1 Tbsp olive oil
  • 1 Tbsp balsamic vinegar
  • 1 tomato, diced
  • 2 Tbsp chopped fresh basil
  • ¼ tsp salt
  • ¼ tsp pepper
  • ¼ cup shredded Parmesan cheese

Instructions

  1. Cook pasta according to package directions; drain, reserving ¼ cup pasta water.
  2. Cook spinach and garlic in hot oil in a nonstick skillet over medium heat, stirring often, until spinach wilts.
  3. Add vinegar, tomatoes, basil, salt, and pepper; cook 1 minute. Add hot pasta and enough pasta water to make a thin sauce; toss. Sprinkle with cheese.

  • 4 oz French bread
  • 1 Tbsp olive oil
  • ½ tsp dried thyme

Side Dish Instructions

  1. Preheat broiler. Cut bread in half lengthwise, and place, cut sides up, on a small baking sheet. Drizzle with oil; sprinkle with thyme. Broil 2 to 3 minutes or until toasted.
