Skillet Mozzarella Chicken with Basil

Ingredients

  • 2 lb boneless, skinless chicken breasts
  • 2 Tbsp olive oil
  • 1 (24-oz) jar fire roasted marinara sauce
  • 1 pint grape tomatoes, halved
  • 1 (8-oz) ball fresh mozzarella cheese, thinly sliced
  • 1 (0.5-oz) pkg fresh basil, thinly sliced
  • 2 Tbsp balsamic vinegar

Instructions

  1. Cut chicken in half crosswise and pound to an even thickness between plastic wrap using a meat mallet. Season with salt and pepper, if desired.
  2. Cook chicken in hot oil in a large cast-iron skillet over medium-high heat 4 minutes per side or until browned.
  3. Add marinara sauce and tomatoes to skillet; cook 5 minutes or until chicken is done.
  4. Top chicken with cheese. Cover, and cook 2 minutes or until cheese is melted. Sprinkle with basil; drizzle with vinegar.
