Chicken Fajita Quesadillas

Ingredients
- 2 lb boneless, skinless chicken breasts, sliced
- 1 (20-oz) pkg frozen bell pepper and onion blend
- 1 (1-oz) envelope taco seasoning mix
- 3 Tbsp olive oil
- 6 burrito flour tortillas
- 1½ cups shredded Cheddar Jack cheese
- ½ cup sour cream
Instructions
- Preheat oven to 450°F; place 2 large baking sheets in oven while preheating.
- Toss together chicken, bell pepper and onion, and seasoning mix; cook in hot oil in a large nonstick skillet over medium-high heat, stirring frequently, until chicken is done.
- Place chicken mixture on one half of each tortilla; sprinkle with cheese. Fold side of tortillas over filling.
- Spray preheated baking sheets with cooking spray. Transfer quesadillas to pan and spray tops with cooking spray. Bake 10 minutes or until crisp and golden brown. Serve with sour cream.
