Ingredients

  • 2¼ lb salmon fillets 
  • ¾ tsp garlic powder
  • ¾ tsp salt
  • 2 (8.5-oz) pouches microwavable coconut jasmine rice
  • 2 limes
  • 3 avocados, sliced
  • ⅓ cup chopped fresh cilantro

Instructions

  1. Preheat oven to 450°F. Place fish on a large rimmed baking sheet; sprinkle with garlic powder and salt. Bake 12 to 15 minutes or until fish flakes with a fork.
  2. Meanwhile, cook rice according to package directions.
  3. Squeeze juice from 1 lime; cut remaining lime into wedges. Toss lime juice with avocado. Divide rice among bowls. Top with fish, avocado, and cilantro; serve with lime wedges.
